Fruit and coconut-milk yogurt (So Delicious brand is fairly easy to find in stores) make an easy, healthy, vegan breakfast. No stove involved! My husband is retired and prepares our meals. He prepares two days of fruit at a time — usually strawberries, blueberries, and blackberries — then adds a banana and yogurt in the morning. Sometimes, a little organic granola sprinkled on top. Yummy!
