Jacob, I am not a celiac but am allergic to wheat. An allergy that I was able to control by limiting how much white-flour food I ate, but that all changed during the pandemic. With my focus on the virus and not my diet, my safeguards fell to the wayside and my allergy exploded, leading to the recurrence of IBS. 2020 was a helluva a year for me.

As difficult as my chronic problems are, yours are worse. I am so sorry that you suffer from celiac disease. It's a rough illness to have.

It's difficult for people like us to eat in a modern world of packaged foods. Always warnings of traces of this or that. We can't trust labels. Eating out is even worse. No one in a restaurant can give an accurate ingredient list for the meals served.

With all that aside, I want to welcome you to Weeds & Wildflowers. This is the place for sharing it all - everything that makes us imperfectly human and perfectly us!
