Other than the waste of a perfectly good pepper withering on the plant, I honestly don’t need to freeze them to have a year-long supply. I have fresh peppers well into December. My plants often survive the winter, although this past one was too cold for too long, and start producing again in February. I just wrap and refrigerate the last ones of the season and they last a month or more. All my pepper plants died during our January freeze that last most of the month. I was late planting new ones but will have some ripe ones soon!
