Thanks, Sherry! They were delicious. We are planning to make more in the near future. My husband is only interested in the traditional ones but the kids and I are excited to try some unusual fillings. There is a small chain of empanada shops in NY and NJ called Ruben’s. They use very creative fillings in addition to the traditional ones. Every vegetarian one I’ve tried was tasty. We want to experiment using the ingredients of some of Ruben’s empanadas.

The kids and I started cooking on Saturdays in 2015. We did it for about three months and enjoyed the experience very much. 2016 was so busy that the Saturday cooking lessons ceased. Now that my daughter and grandchildren no longer live with us, the children are only with me on Saturdays so I try to reserve that day for them — just for fun things we like to do. Cooking is back on the Saturday menu (pun intended)!
